Rainbow Pasta Salad Jars

Our product development chef, Mariana Avila shares her favorite summertime recipe for Rainbow Pasta Salad Jars. These bright and colorful jars are easy to make, carry around, and are packed with essential nutrients and vitamins. 

Prep Time: 10 minutes
Cook Time: 10 minutes 
Total Time: 20 minutes
Serving Size: 4 medium mason jars or 6 small mason jars 

  • 1 box whole grain rotini (follow cooking instructions on the box)
  • 1 cup green peas 
  • 1 can tuna in olive oil, drained
  • 4 tbsp mayonnaise
  • 4 tbsp yogurt, plain
  • 1/2 tsp. salt
  • Juice of half a lemon
  • 1/2 small pack chives, snipped (optional)
  • 1 cup cherry tomatoes, quartered
  • 1 orange pepper, cut into little cubes
  • 1 can sweetcorn, drained
  • 4-6 medium or large mason jars

Instructions:

Step 1

Cook the pasta until it is still a little al dente (2 mins less than the pack instructions) and drain well. Cook the peas in simmering water for 2 mins, then rinse in cold water and drain well, set aside.

Step 2

Mix the tuna with mayonnaise, yogurt, and salt, finish with a squeeze of lemon juice, mix well. Add the chives, if using.

Step 3

Tip the pasta into a large glass bowl or four small ones, or four wide-necked jars (useful for taking on picnics).

Step 4

Spoon the tuna dressing over the top of the pasta. Add a layer of peas, followed by a layer of cherry tomatoes, then the orange pepper and sweetcorn.

Step 5

Cover and chill until you’re ready to eat.
