Rainbow Pasta Salad Jars

These bright and colorful jars are easy to make, carry around, and are packed with essential nutrients and vitamins.

Serving Size: 4 medium mason jars or 6 small mason jars
- 1 box whole grain rotini (follow cooking instructions on the box)
- 1 cup green peas
- 1 can tuna in olive oil, drained
- 4 tbsp mayonnaise
- 4 tbsp yogurt, plain
- 1/2 tsp. salt
- Juice of half a lemon
- 1/2 small pack chives, snipped (optional)
- 1 cup cherry tomatoes, quartered
- 1 orange pepper, cut into little cubes
- 1 can sweetcorn, drained
- 4-6 medium or large mason jars
Instructions:
Step 1
Cook the pasta until it is still a little al dente (2 mins less than the pack instructions) and drain well. Cook the peas in simmering water for 2 mins, then rinse in cold water and drain well, set aside.
Step 2
Mix the tuna with mayonnaise, yogurt, and salt, finish with a squeeze of lemon juice, mix well. Add the chives, if using.
Step 3
Tip the pasta into a large glass bowl or four small ones, or four wide-necked jars (useful for taking on picnics).
Step 4
Spoon the tuna dressing over the top of the pasta. Add a layer of peas, followed by a layer of cherry tomatoes, then the orange pepper and sweetcorn.
Step 5
Cover and chill until you’re ready to eat.
